3 cups sugar\ 1 cup oil\ 4 eggs\ About 2 cups (more or less) pumpkin puree\ 3 cups flour\ 2 teaspoons baking soda\ 2 teaspoons salt\ 1 teaspoon baking powder\ 2 teaspoons cinnamon\ 1 teaspoon nutmeg\ 1/4 teaspoon cloves\ 2/3 c. cold water\ chopped nuts, about 1-2 cups if desired
Mix together the sugar and the oil. Add the eggs and the pumpkin, mixing\ well. Add all dry ingredients, mixing thoroughly, then add water (and nuts, if\ you want them). Bake at 325 F for 1 to 1.5 hours (check for doneness with a\ toothpick, like a cake). Makes 2-3 loaves or one bundt cake pan.
I know it sounds a little intimidating, but it’s really good and not all that\ complicated once you try it. This is a staple holiday recipe among my\ family. Goes great with hot chocolate for breakfast.
